Mixed Mushroom Ragout

  • 8 ounces cremini mushrooms, halved

Directions

Mushroom Chicken and Rice

  • 2 tablespoons canola oil, divided

  • 1 teaspoon paprika

Directions

  • 1/2 ounce dried mushrooms, any type

  • 1 cup boiling water

  • 2 1/2 cups chicken or vegetable stock, approximately

  • 1 clove garlic, chopped

  • 1 cup short-grain brown rice

  • 1/4 cup white wine

  • 1/2 teaspoon salt

  • 1 tablespoon olive oil

  • 1/2 pound cremini or baby bella mushrooms, sliced

  • 1/4 cup Parmesan cheese, shredded

  • 1 tablespoon parsley, minced

Directions
